Peanut Brittle

Banish all thoughts of sticky, dense, tooth-cracking brittle from your mind! Ours is cooked in small batches with butter and sea salt to shades of deep gold to bring out all the caramelized flavor and to achieve the correct light and airy, crispy, crunchy, and brittle texture. The raw peanuts are added to the caramelized sugar in the last few minutes of cooking, just long enough to roast perfectly, so the full flavor of fresh-roasted peanuts is very prominent. When the cooking is done, and the brittle is poured onto buttered sheet trays to cool, our candy cooks pull and stretch it out by hand at just the right moment (before it solidifies, but after it cools enough to be stretched) into a light and airy, crispy and crunchy confection.
