There are real vanilla beans in the Marshmallows. Not sure I can get you the recipe. At the Bakehouse they make large amounts at a time and you'd have to scale the recipe way down, and then test a lot to make it accurate. I think it's better to get a recipe that is already the small size you want if you are going to make these at home - just use the best ingredients you can and they should come out just fine.

Thanks for your excitement, Lisa. We are excited to have it back from 'vacation' also. I really love the chocolate-raspberry combination and this bar has lots of very up front raspberry aroma and flavor. I've tasted this bar with many customers lately and I've gotten used to their eyes rolling back in their heads when they have that first bite. They say, "Wow!" I say, "za!"

Thanks, Candace, for your question about the kinds of sugar we use. Currently we use white granulated cane sugar, muscavado brown sugar, corn syrup and honey. There are different sugars available, some of them synthetic even. We want to use the real thing and be as traditional as we can. I will quickly add that there is a lot of talk about corn syrup and remind that corn syrup has been around for quite a while. It is a pleasure working with granulated sugar in this age considering that historically all sugar was 'raw' and had to be clarified before use - especially if it need to be clear. So syrups were and are quite common in candy making. Sugar syrups can be produced from many sources. The most common is corn in this country because we have a lot of it. And one interesting thing about honey that not a lot of people know: it is a high-fructose syrup.
